Brown Bread

 
 

 

 
 

2 cups corn meal
1 cup flour
2/3 cups molasses
1 heaping teaspoon B.P. [baking powder]
2 1/4 cups cold water
salt

dissolve soda [B. P.?] in the 1/4 cup water

steam 2 hours

this one and a half makes two coffee cans and one B.P. can

[Aunt Pit assumed that we know what else to do. For those of you who don't:

Grease the cans

Mix the cornmeal, flour, baking powder and salt together in a large bowl.

Stir the water and molasses together in another bowl.

Combine the wet and dry ingredients.

Pour the batter into the greased cans about 2/3 full.

Cover tightly with greased aluminum foil.

Place on a rack in a pot large enough to hold the can or mold and add about 1 inch of water.

Bring to a boil over high heat on the stove.

Cover the pot tightly with a lid and reduce heat to low.

Steam for 2 hours, adding extra water as needed, until the bread is cooked through and a toothpick inserted comes out clean.

Remove from the pot and allow to cool for about 15 minutes before unmolding.]
